Web Course – Juicing

Overview

This web course will introduce participants to the basic unit operations involved in the processing of fruit and vegetable juices, the hazards that are reasonably likely to occur, measures to control these hazards to render the finished juice safe, and the differences in the regulations governing juice at the commercial, retail, and foodservice levels. Interactive activities will be used to demonstrate the application of HACCP/Preventive Controls principles to produce safe juice and affirm participant learning.

The cost for this web course is $100.00 or you can choose three (3) courses for $250.00.

Scope

The course is a self-paced, web-based course that will cover juice-processing operations at the commercial, retail, and foodservice levels. Juice processing operations are mandated to use HACCP principles to produce safe food under 21 CFR 120. The Food Safety Modernization Act (FSMA) also requires the use of HACCP principles for all food operations from farm to fork under Preventive Controls.

At the retail and foodservice levels, there are provisions that cover juicing operations. These provisions are contained in the FDA Model Food Code and remain voluntary until States adopt them partially or entirely. Thus, it is important to determine the status of the adoption of the Model Food Code in your specific area to determine the scope of the regulations that apply.

Target Audience

The target audience for this course is industry and federal, state, tribal, territorial and local food inspectors.  

Course Progression

Each module should take 1 hour to complete and may be completed at the participant’s own pace.  Participants must complete all 4 modules before taking the course post-test.

This self-paced course will be delivered using PowerPoint-style presentations designed by content experts, video scenarios for participant review, interactive activities in each module and other resources for participants to review. 

A multiple-choice post-test will be administered at the end of module 4. The post-test will be available to participants who complete all 4 modules. A minimum score of 80.54% is required for passing and to permit participants to download the completion certificate.
